Passover begins Monday. Matzo is a flavorless adaptation of the biblical unleavend bread.

Wasn't bad with butter and salt. Fried matzo was pretty good if prepared correctly. I never made it.

Maybe I'll get some of those overly sugared gelatin fruit slices as well. Only go around once!

Sponge cake. Thought my Grandmother invented this abominable perversion of dessert. It was more suitable as a spare tire, than a confection.


Late 1980's, Seder at my old man's house. Granny busts out the sponge cake that she brought. "Can't take all the eggs, protested my Father (he pretty much quit them cold turkey when his cholesterol went through the roof.) "Don't worry," responded granny, I only used two eggs for the whole cake."
Driving her home, she confessed that the cake contained a dozen eggs. JFC

That actually looks pretty good. Is it similar to pound cake in texture and taste?

Denser and without the nice buttery flavor of pound cake. Had one for a outdoor bake sale in High School. Didn't sell so I rolled it like a bowling ball down the pavement. It traveled about 100 feet with little damage to the cake (or the pavement.)
